I also asked about the optional age rules - he said we're not using those.

Well... what does my team think?

Should I make a Monk, or a Cleric/Magic-User (or Fighter/Illusionist)

Hmm... Well, Skull Mountain implies dark cults and undead, so a cleric might not be a bad idea. But there are other ways of driving off the undead besides the cleric's Turn powers.

What's the most interesting character you can create with your stats? I'd rather have fun than efficiently bash my way through a dungeon. Your Milage May Vary...

True (about the Cleric), and I'd be happy playing either. Just wondered if anyone else had any opinions/thoughts, etc.

Those are all great choices. The monk really interests me since I have never played one. The other two multi-class type would probably be better for the party but not as spicy to play.
