AEC Attack Tables
Do they exist? Or am I missing the guidance somewhere to use the core LL tables? One can make inference based on how Saving Throws work, but that's not set in stone.

Use the ones in LL. AEC is designed as an add-on to the basic LL system, not as a different system. Same with OEC.

No problem.
Assassin's & Druids use the Thief/Cleric attack table?
Illusionists the MU? (for sure)
Rangers & Paladins use the Fighter? (most likely)

That's correct. Monks attack as Clerics too.
