Furuk reaches for his crossbow and loads a bolt in it. He begins shooting at the large fish as soon as possible.

Grimes draws his sword and says "Come here fish, I'm gonna kill ya, then I'm gonna EAT ya!" And he'll jockey for a good swing at the fish.

Fishy fishy fish!

Initiative Sturgeon d6, 5; Party d6, 4 The giant sturgeon has initiative!

The sturgeon attacks Einar who is nearest the side of the boat (d20, 3, MISS) but can't get his maw around him.

The party retaliates.

Dieter throws a dart (d20, 17, HIT, dmg d4, 4) hitting the fish.

Furuk fires a bolt (d20, 8, MISS) but his shot is wild.

Dandy (autopilot) throws his hammer (d20, 14, HIT, dmg d8+2x2, 8+2x2=20) and smashes the side of the giant fish.

Grimes takes a swipe with his sword (d20, 15, HIT, d6+3, 3=3=6) and blood is in the water.

Einar also uses his sword (d20, 8, MISS) but cannot connect.

The fish is shaken because it was so gravely injured (morale check, 2d6, 8, PASS) but is still hungry so circles around for another bite.

Actions?

Dieter will draw his dagger and try to get a slice out of the critter, if he can find his dart from last round he'll try to grab it.

Furuk spends this round reloading.

Dandy throws his mighty hammer (d20, 3, MISS) but doesn't find his target.

Dieter stabs at the fish with his knife (d20, 18, HIT, dmg d4, 3) and grabs for his dart (to hit roll, 19, HIT) and barely yanks it out.

Einar (autopilot) swipes at the fish with his sword (d20, 1, CRITICAL MISS) and falls off the side of the boat into the water! The fish makes for him.

Grimes stabs with his short sword (d20, 17, HIT, dmg d6+3, 2+3=5) and plunges it into the fish's eye, killing it!

The fish floats on the surface, dead.

Einar is unencumbered with heavy armor so, with some effort, he is pulled back into the boat without capsizing it. He's dripping wet and the cave is chilly.

Actions?

OCC: Is the fish large enough that if we pulled it next to the boat, maybe we could hide behind it?

Why, yes, you could do that. It's much longer than the boat and will slow travel (as well as potentially attract predators) but that's totally doable. You might want to get someone to help Furuk row to make up for the additional drag.
