Per http://www.ex-astris-scientia.org/artic ... _ships.htm, the only Federation/Romulan/Klingon ship classes ever seen on-screen (notwithstanding shuttlecraft or starbases) in Star Trek TOS are:
•Constitution class (http://en.memory-alpha.org/wiki/Constitution_class)
•J-class (http://en.memory-alpha.org/wiki/Class_J_starship)
•D7 class (Klingon / Romulan battlecruiser) (http://en.memory-alpha.org/wiki/D7_class)
•Bird of Prey (Romulan) (http://en.memory-alpha.org/wiki/Romulan ... nd_century) )
•Antares class (http://en.memory-alpha.org/wiki/Antares_type)
Using data from Memory Alpha (and filling in the gaps with a little imagination):
Constitution Class (Heavy Cruiser)
The Constitution-class starships, which were also known as Starship-class1 or Class I Heavy Cruisers, were the premier front-line Starfleet vessels in the latter half of the 23rd century. They were designed for long duration missions with minimal outside support and are best known for their celebrated missions of galactic exploration and diplomacy which typically lasted up to five years.

J-Class (Cargo / Transport / Cadet Training Ship)
The class J starship was a small, antiquated starship design used by the Federation and independent traders alike well into the mid-23rd century.
Crew complement: 6
Command rank: civilian
Power Pile Base: 50 (two pods)
Teleporter capacity: 1 at a time
Beam banks: None
Ion Torpedoes: None
Shuttle ships: 1
Sick bay capacity: Two sick bays, each with a capacity of 2
D7 class (Battle Cruiser)
The D7 class battle cruiser was a 23rd century warship originally designed and used by the Klingon Imperial Fleet, before being shared with the Romulan military during the late-2260s.
Crew complement: 430
Command rank: Klingon Captain or Romulan Commander (equivalent to a Federation Captain)

Sick bay capacity: 5
Bird of Prey Class (Light Cruiser)
The Romulan Bird-of-Prey was a type of space vessel that was in service with the military of the Romulan Star Empire during the latter half of the 23rd century. Gaining its name from the bold pattern of an alien bird's feathers painted on the ship's ventral hull, the Romulan Bird-of-Prey was the successor of a 22nd century counterpart of similar design.
Crew complement: 170
Command rank: Sub-Commander (equivalent to a Federation Commander)
Power Pile Base: 200 (two pods)
Teleporter capacity: 6 at a time
Beam banks: None
Fireball Torpedoes: 10
Shuttle ships: 2
Sick bay capacity: 5
Notes: The Bird-of-Prey has an alternate defense screen configuration that bends light and sensors around the hull, thus cloaking it from detection. This cloaking device configuration has the same energy requirements as full screens, cannot absorb incoming attacks, and must be lowered to fire weapons. Teleporters may be used while cloaked. Cloaking imposes a -4 penalty to an opposing ship’s combat skill check, and grants a +4 bonus to save checks in regard to effects in which knowing the cloaked ship’s location is a factor.
Antares class
The Antares-type was a small, multipurpose 23rd century Federation starship identified as a survey ship, transport, cargo and science-probe vessel. This class of vessel was commonly used during the 2260s.

Command rank: Captain
Power Pile Base: 100 (two pods)
Teleporter capacity: 4 at a time
Beam banks: 0
Ion Torpedoes: 0
